Zucchini Bread and Muffins
3 Eggs 1 Teaspoon Baking Soda
1 Cup Oil 3 Cups Flour
2 Cups Sugar 2 Cups Shredded Zucchini
3 Teaspoons Vanilla 1 Cup chopped walnuts
(nuts are optional)
Pre-heat oven to 350 degrees
Mix together eggs, oil, sugar & vanilla. Combine flour, baking soda, zucchini and nuts (if you are using them ... I don't put them in the muffins but sometimes and the finely chopped walnuts to the bread) Mix flour, baking soda and zucchini in with the other ingredients ( you can mix the zucchini, baking soda and zucchini together before adding them to the other ingredients.
Fill muffin cups and small bread tins 3/4 full.
Bake muffins for 22 minutes and small breads 45 minutes
